GF Asian Peanut Chicken



Note: if you'd like a little more texture use chunky peanut butter or chop a few peanuts on the top for garnish.


Asian Peanut chicken


1.5 lbs Chicken (cut into chunks)

Salt & pepper 

2 tbsp butter/ ghee

2 tbsp oil (I use grapeseed or peanut)

2 red bell peppers (julienned) 

3 cloves garlic (minced) 

¾ cup chicken stock

⅓ cup peanut butter 

3 tbsp gf soy sauce/ coconut amines

¼ tsp red pepper flakes

Green onion (garnish)


Season chicken with salt and pepper. Heat large skillet with half of the butter and oil on medium heat. Add chicken and cook for 3-4 minutes when chicken is lightly browned, put on plate. Add the remaining butter and oil to pan and saute the bell peppers and garlic. In a bowl whisk together stock, peanut butter, soy & crushed pepper and set aside. After sauteeing the pepper garlic mix for 3 minutes, add the chicken back into pan and add sauce. Reduce the heat slightly and let simmer for 8 minutes, stirring frequently. When sauce is thickened and chicken is fully cooked, top with green onions and enjoy. If you're not keto/low carb you could put this over GF noodles.
