I'm using metric because it's easier when using a scale.
50 g Pumpkin Puree (Pure not pie filling)
1/4 tsp Baking Powder
10 g Coconut flour
8 g Almond flour
1 egg
1/4 tsp xanthan gum
20 g cream (Coconut milk for DF/V)
1/2 tbsp Butter (Vegan butter or oil for (DF/V)
Mix all ingredients in a bowl while waffle iron preheats. When iron is hot and 1/3 of the batter. Top with your favorite waffle topping (butter, syrup, etc).
These are soft and have a pudding like consistency, so if it breaks a little don't worry it still tastes good.
