GF Kentucky Butter Cake (Keto/Low Carb adaptable)


You will need a pressure cooker to make this recipe (Foodi/ Instant Pot). Unfortunately, you won't get the moist pound cake like texture without one.


That being said it's super easy and quick.


2 servings (doubling will change cook time)


Ingredients:

112 g Almond Flour

75 g "Sugar" of your choice (I used Allulose)

1 tsp Baking Powder

2 eggs

1/4 cup Butter, melted or soft

2 tsp vanilla


For Cooker:

1/2 cup water

7 in bundt pan

Trivet


Mix dry ingredients until no lumps can be seen. Slowly add remaining ingredients until smooth.


Add water to pressure cooker. Put batter into bundt pan and place on a trivet. Cover with foil or silicone cover (to prevent steam from dripping on the top).


Pressure cook in high for 22 minutes then quick release steam. Let rest for a few minutes and flip onto a plate.

Powdered sugar is an easy decoration or you could make a simple compote with any fruit of your choice, water and 1/4 cup "Sugar" (drizzle on after cooling slightly).
